Bringing home boxes of apples can be intimidating, but we were able to put them all to good use. One box was chopped and dehydrated, and the other went into the juicer to make this beatiful brilliant tart juice. It helps to bear the thought of winter coming, knowing that we will be able to snuggle up with some hot apple cider when the snow falls. The leftover pulp was turned to sauce, and used for these dense apple oatmeal muffins with cardamom. The recipe can be found here.
They were delicious for breakfast with yogurt and chokecherry syrup. What a wonderful season!
